Two. I consider a sandwich to be the single thing you pick up and eat. If someone had a bag of them and you asked for a sandwich, you'd only get one, wouldn't you?

And if you cut them into quarters, you have four mini-sandwiches.

Completely wrong - what you are referring in that example is, of course, *half* a sandwich. Half sandwiches should always be wrapped in pairs to make a whole sandwich - I mean - what's the point otherwise?

Don't get me started about sandwich quarters - buffet sandwiches are a *completely* different beast ;-)

Well, yes, cut and dried you would think but... what if the two slices of bread are replaced by a baguette, and the resulting sandwich then cut into two portions. Obviously now sandwiches.

Logically, in the example above, we have to say two sandwiches else we destroy the fabric of society.

I was a little more definite on it being one sandwich earlier, but I've loosened up and think if that if is viewed by the sandwich cutting person as one, it is one, if they view it as two, it is two. It's all about intention, although a dictionary definition of sandwich is that which involves any sort of food between two slices of bread, but life is too short and full of buffets and stop making me hungry.
