And then there's baguette sandwiches - do you have a set length of baguette you define as one sandwich? IMO, any length of baguette can be a sandwich, so if you cut one in half you'll have two.

I might call the rolled-up bread a rolled-up sandwich though.
A Big Mac is obviously a burger rather than a sandwich. A very flat roll that's been cut into two, however, is close enough to a sandwich to be one, while something like a Napoli roll isn't. Apply a test of least astonishment for getting one of these when you ask for a sandwich :)
IMO, pitta breads with filling are distinctive enough to be called pitta breads rather than sandwiches - and when getting a kebab, the kebab is the point rather than the pitta bread, so you call it a kebab.
